 Being diagnosed with Celiac was my body's way of telling me that enough was enough with all the carbs I was having. As a result, I've been having more salads. And whadya know? They're pretty good. :)

 I've been trying different veggies, such as olives, and am liking it. I'm also trying salads with different meats in it. I'd normally fall over in shock from not having a ton of carbs in my diet, but have managed to live thus far eating more veggies. ;)

 Here's to creating positive, lasting healthy eating changes!
